This is a family favourite in our house, amongst young and old.
It started out as good old tomato soup, another old faithful favourite was added and now it’s called soccer ball soup by the kids.
It’s jammed packed with vegetables – without the kids realizing it – and let’s face it, nothing screams comfort food like a big plate of spaghetti bolognaise.
The recipe does require a blender/stick blender or very good chopping skills.
You can use any vegetables you have available at home in the fridge. My go-to options are usually 1 onion, 2 celery stems and 2-3 carrots.
Ingredients
- 4 cloves of garlic, chopped
- 2 tbsp of flour
- 1 can chopped or whole tomatoes (if you only have tomato and onion mix, it will also do. Just add in an extra sachet of tomato paste)
- 1 sachet of tomato paste
- 2 cubes beef stock
- 500ml water
- 500g lean mince, rolled into bite-sized meatballs
- 350g spaghetti or any other pasta you have on hand
Instructions
- Sauté all vegetables and chopped garlic in a tablespoon of oil.
- Add flour and cook for a few minutes.
- Add tomato paste, canned tomatoes, stock and water.
- Bring to the boil, then simmer for 15 minutes.
- Let it cool down and blend as fine as desired.
- Add meatballs and bring back to the boil.
- Add spaghetti and cook until tender.
- Remove from heat, then add salt and pepper to taste.
Add grilled cheese soldiers to dip for a quick dinner or prepare a big pot over the weekend and have lunch sorted for a few days.
