No Bake Chocolate and Coconut Bites


  • 1 cup dates, pitted
  • 3 tbsp peanut butter (or nut butter of choice)
  • 1 tbsp honey
  • 2 tbsp cocoa powder
  • ¼ cup chocolate chips or finely chopped chocolate
  • Desiccated coconut


  • In the bowl of a food processor, add the dates, peanut butter, and honey. Process until well combined. If the mixture isn’t smooth add 1 tsp of water and continue processing. Be careful not to add too much water because it will make the dough too sticky.
  • Add cocoa powder and mix until fully combined.
  • Add chocolate chips to the mixture and mix by hand until they are evenly distributed.
  • Divide the mixture into 12 equal portions. Roll each portion into a ball.
  • Place some of the desiccated coconut into a bowl or on a plate.
  • Roll each chocolate bite in the desiccated coconut until coated.
  • Place the chocolate bites in the fridge to set. Store in an airtight container for up to 2 weeks.
