Ingredients:
- 1 cup dates, pitted
- 3 tbsp peanut butter (or nut butter of choice)
- 1 tbsp honey
- 2 tbsp cocoa powder
- ¼ cup chocolate chips or finely chopped chocolate
- Desiccated coconut
Instructions
- In the bowl of a food processor, add the dates, peanut butter, and honey. Process until well combined. If the mixture isn’t smooth add 1 tsp of water and continue processing. Be careful not to add too much water because it will make the dough too sticky.
- Add cocoa powder and mix until fully combined.
- Add chocolate chips to the mixture and mix by hand until they are evenly distributed.
- Divide the mixture into 12 equal portions. Roll each portion into a ball.
- Place some of the desiccated coconut into a bowl or on a plate.
- Roll each chocolate bite in the desiccated coconut until coated.
- Place the chocolate bites in the fridge to set. Store in an airtight container for up to 2 weeks.
