Boxing Day lunch sorted!
This is perfect for Boxing day – when you can’t really think about food but yet you wake up hungry!
Salad Ingredients:
*adapt quantities as needed
- 1 Cubed apple (leave skin on for extra fibre)
- 2 Stalks of celery (washed and sliced finely)
- 2 Small radishes (finely sliced)
- 2 Cups of shredded butter lettuce
- Feta and/or shredded leftover meat (I recommend crispy diced bacon)
- Sunflower seeds/walnuts to sprinkle over
Mix salad ingredients together
For the Dressing:
- 2 Tablespoons Balsamic vinegar
- 1 Teaspoon wholegrain mustard
- A squirt olive oil
- 1 teaspoon honey
- Season with salt and pepper to taste
Dress the salad generously right before serving
