Everybody loves a good old banana bread and here is a recipe the kids will devour and believe you me there is no need to spread extra butter on top. Unfortunately, banana bread does not count as a fruit serving but keep the portions small for little tummies and enjoy it on a special occasion.
Let the little one’s help get the ingredients together.
You will need:
- 125g Butter
- 250g Brown sugar
- 2 Extra-large eggs
- 30ml Plain yoghurt (flavoured is also fine)
- 5ml Vanilla essence (can substitute with caramel essence)
- 6 Ripe bananas, mashed
- 60g Chopped nuts/ chocolate chips or seeds (my favourite is a mix of sunflower seeds and pumpkin seeds with a dash of cinnamon)
- 250g Cake flour
- 5ml Bicarbonate of soda
- 1,5ml Salt
Method:
- Preheat the oven to 180°C and prep your bread pan with cooking spray and baking paper.
- Get the kids measuring, pouring and tasting different ingredients. It might be a little messier and take some extra time but it will be worth the special memories! There are a few bowls involved but it’s an easy step by step method for the kids to follow. Try giving each child a task (age-appropriate).
- Mix the butter and sugar together until light and fluffy in bowl 1.
- Beat the eggs lightly in a separate bowl (bowl 2). Add the yoghurt and essence of your choice.
- Mash the bananas in a bowl (3) and add some nuts/seeds/chocolate chips.
- Combine the flour, salt and bicarbonate of soda together (bowl 4).
- Slowly add the egg mixture (bowl 2) into the butter mixture (bowl 1).
- Fold the bananas (bowl 3) into the butter mixture/batter.
- Lastly, fold the flour mix (bowl 4) into the batter.
- After everything is mixed well, pour the batter into the baking pan and into the oven it goes for 50-60 minutes (enough time to tidy up together), depending on your oven. Your bread should be golden brown – test using a toothpick or knife.
- Let it cool down and enjoy with a glass of milk and well-deserved coffee for you!
